In 1999, Buffalo Trace began an experiment to find the ultimate combination of wood and mash to make the world’s greatest bourbon. They began by selecting 96 individual oak trees from which to make barrels. Those trees were cut in half (creating a top and bottom section), resulting in 192 possible sections of wood. Each section was then fashioned into a single barrel. The seasoning time of each section varied, as did the char level. Alltech Lexington Brewing and Distilling Co. bills itself as one of the world’s only “brewstilleries,” where brewing and distilling operations share common space.   It’s a great concept, allowing Alltech the freedom and convenience of always having an ample supply of bourbon barrels in which to age beer.  This leads to what is perhaps Alltech’s signature beer line, the Bourbon Barrel Ale and Stout. Today marks the 150th birthday of Beam Brands namesake, James B. “Jim” Beam.
